This has got to be the most delicious granola I have ever tasted! It smells amazing when baking and tastes great as both a cereal and a granola. This is quite dense with good fats and with calories, so try to stick to 1/4 cup or 1/2 cup servings (the serving size reflected in the nutritional information). Ingredients

- 2 Cups Chopped Raw or Dry Roasted Almonds
- 2 Cups Chopped Raw Walnuts
- 6 Cups Old Fashioned Rolled Oats
- 2 Tbsp. Ground Cinnamon
- 0.5 tsp. Ground Cloves
- 0.5 tsp. Ground Ginger
- 1 tsp. Ground Nutmeg
- 0.5 tsp. Sea Salt (Like Real Salt Brand)
-1 Cup Organic Virgin Coconut Oil, melted (do not use conventional, cheap coconut oil. There should be a strong coconut taste and scent to the oil. Conventional coconut oils are mostly taste and scent free. Carrington farms is a widely available brand that is well suited for this recipe).
- 1 Cup Real Maple Syrup
- 2 tsp. Pure Vanilla Extract
Tips
Store in an airtight container for 2 weeks. You can easily halve this recipe if your kids or spouse aren't partial to this granola or you keep a good variety of breakfast options in the house. My Husband loves this, so I always make a full batch! :-)
Directions
1. Preheat the Oven to 300F.
2. Combine the oats, nuts, and spices in a large bowl.
3. Pour in the coconut oil, maple syrup, and vanilla. Toss with a silicone spatula until well combined.
4. Spread evenly on two large jelly roll pans or rimmed baking sheets (18" X 13")
5. Place both sheets in the oven, rotating and tossing the granola and the pans halfway through cooking time. Bake for 35-45 minutes or until browned, but not extremely crisp.
Serving Size: Makes 20 1/2 cup servings or 40 1/4 cup servings
