Ingredients

    1/2 c dried adzuki beans
    4 c water
    1 T canola oil
    1 medium yellow onion, chopped
    5 garlic cloves, minced
    1.5 c peeled and diced sweet potatoes
    1 c carrots, peeled and diced
    4 inches ginger, peeled and minced
    2 T soy sauce
    cayenne to taste

Directions

Start simmering adzuki beans in the water. Meanwhile, sauté the onions and garlic in the oil. When they are softened, add them to the soup pot. Then, add the sweet potatoes, carrots, and ginger. Cook for an hour, or until the beans are soft. Then add the soy sauce and cayenne.
