Number of Servings: 14

Ingredients

    1 1/2 cups low fat buttermilk
    1- 15oz can of Pumpkin puree
    2- jumbo eggs
    2 TBL coconut oil
    2 tsp. vanilla extract
    2 1/4 cups Brown Rice Flour
    1/4 cup blackstrap Molasses
    2 tsp. Baking Powder
    1 tsp. Baking Soda
    1 1/2 tsp Cinnamon
    1 tsp Pumpkin pie spice
    1/2 tsp ginger
    1/2 tsp nutmeg
    1/2 tsp salt
    2 TBL Whey Protein Powder

Tips

You might have to add alittle extra buttermilk if the batter is too thick


Directions

Mix all the wet/liquid ingredients first, then mix in dry. Cook on a hot griddle until bubbles begin to form - flip and cook another minute or so. Serve warm. Very very good and hearty!
