Ingredients

    1 eggplant slice lengthwise into 1/2 inch slices
    1/2 cup chopped cucumber
    Feta Cheese, .25 cup, crumbled
    Olive Oil, 1 tsp

Tips

I slice and salt my cucumber before cooking. I let it sit on papertowels for 20 to 30 minutes and then rinse and pat dry.


Directions

Lightly brush oil over eggplant slices. Grill each side 7 to 8 minutes. Sprinkle with chopped cucumber and feta cheese.
