Number of Servings: 8

Ingredients

    1 cup chopped onion
    1/4 cup chopped celery
    1/4 cup chopped bell pepper
    6-8 eggs, depending on size (i use 8 medium eggs)
    1/2 lb Ground Sausage

Tips

This will make about 8-10 services depending on how you slice it. i make this on Sunday to eat for breakfast through out the work week.


Directions

- brown sausage in oven proof skillet until almost cooked through
- add veggies and saute until sausage and veggies are done
- turn on broiler to preheat a little
- whisk eggs and add to skillet and cook for about 3 min
- put in oven for about 5 min or until cooked through
