Ingredients

    1 Lb Carrots, diced
    1 Medium Yellow Onion, diced
    2 Cloves Garlic, minced
    3 Roma Tomatoes, Chopped
    1 Cup Tomato Juice
    1 Tsp Cumin
    1 Tsp Chili Powder
    1 Tsp Salt
    2 Tbsp Lime Juice
    2 Lb Boneless, Skinless Chicken Breasts
    4 Cups Chicken Broth

Tips

This recipe can be modified based on how many people you are feeding.
I would go with a lower sodium option for everything, I just used what I had on hand.


Directions

Combine ALL ingredients in freeze bag, Chicken should be the last item added to bag- If freezing DO NOT add Chicken broth until day of cooking.

If frozen, thaw 24 hours in refrigerator before cooking.
Cook LOW 4-8 hours, or until chicken is cooked and tender.
