Ingredients

2 to 3 thin slices of onion, diced
2 tbsp canned black olives, drained & rinsed
1/2 cup Diced Tomatoes, drain & let dry on a paper towel to soak up excess juices
1 low carb, high fiber tortilla
1 oz extra sharp cheddar cheese
1 tsp italian season
1/2 tsp basil
Tips
Add or take away whatever standard pizza ingredients you like. My kids like this with BBQ chicken and pineapple. Make sure you drain the tomatoes well or your tortilla will end up soaking in the juice.
Directions
Heat skillet to med-high heat. Spray with cooking spray.
Mix all ingredients into bowl (yes even the cheese).
Place tortilla in hot skillet, add mixture to one half. After about 30 seconds, use a spatula to fold over the empty half of the tortilla. Cook each side 2 to 3 minutes until inside is hot an the tortilla is slightly browned on the outside.
Serving Size: makes one serving each
