Introduction

Number of Servings: 8

Ingredients

    1 1/2 LB. Venison Meat (cut 1/8 inch thick)
    1 1/2 tbsp. Barron Smoke Applewood Rub
    1 1/2 tbsp. Barron Mesquite Seasoning

Directions

Place venison slices laid flat on a large cutting board. Sprinkle one side only with the seasonings. Put the meat in a medium size bowl, cover with plastic wrap and place in the fridge over night. Also put the pear wood in a bucket of water to soak over night. The next day place the meat on a flat sheet with holes in it. Making sure all the meat is laid flat. Light the smoke and let the coals turn white. Put the pear wood on the coals. Place the sheets with the meat in the smoker and smoke at 150 degrees for 3 hours or until stiff. Remove it from the smoker and allow it to cool.

Serving Size: Make 8 3 ounce servings
