Introduction

The addition of ginger, cinnamon, and cardamon to fresh plums make this crumble the perfect dessert to serve on a lazy spring weekend when the lingering chill of winter hasn't quite been shaken from the budding trees. The warm spices and slightly tart plums create a spectacular spring treat your whole family will enjoy. While it's not really a "light" dessert, it is largely due to the almonds in the crumble topping. While they are high in fat and calories, almonds are a great source of heart healthy, monounsaturated fats, and add a nice boost of protein. So go ahead, and indulge a little. Ingredients

    800 grams fresh plums, diced (about 6 cups)
    3 Tbsp Corn Starch
    7 Tbsp Stevia & Cane Sugar blend, divided
    2/3 Bob's Red Mill old fashioned oatmeal, dry
    2 Tbsp Bob's Red Mill's All-Purpose Gluten-Free Flour
    3/4 Cups Sliced Almonds
    4 Tbsp Smart Balance Omega Plus Buttery Spread
    Cinnamon, Cardamon, and Ginger to taste

Tips

I used about 1 tsp Cardamon, 1 tsp Cinnamon, and 1/2 tsp pureed ginger. Feel free to adjust these to your liking. Also, if you don't have the pureed ginger powdered would be just fine.


Directions

*Pre-heat your oven to 350.
*Dice the plums in to small, approximately even sized pieces
*Add 3 Tbsp cornstarch, 4 Tbsp Stevia blend, and spices (to taste).
*Stir together all filling ingredients, and pour into a 9x9 glass pan lined with foil or parchment.
*Combine oatmeal, flour, almonds, remaining 3 Tbsp Stevia blend, and Cinnamon (about 2 tsp).
*Blend dry crumble ingredients with Smart Balance.
*Spread crumble evenly over the plum mixture.
*Bake in pre-heated oven for about 45 minutes or until crumble is golden brown and the juice from the plums begin to bubble through.

Serving Size: Makes 6 generous servings or 8 smaller ones
