Introduction

Great on a bed of salad greens, or as filling for a sandwich or pita! Great on a bed of salad greens, or as filling for a sandwich or pita!

Ingredients

    For Dressing:

    3 TBSP light or fat free mayo
    1/3 cup plain yogurt
    1 tsp. curry powder, or to taste
    Plus any other spices you want to add - I usually add a few shakes of cayenne pepper, sometimes some garlic or onion powder.

    Other Ingredients:

    *Cooked chicken, diced (nutritional info is for 4 chicken breasts)
    *3 TBSP celery, diced
    *1 scallion, diced
    *3 TBSP chopped nuts (walnuts or pecans)
    *15 Red grapes, halved




Directions

Blend the dressing ingredients and refrigerate for at least 30 minutes, to allow the flavors to masserate.
Add remaining ingredients to the dressing, and refrigerate for another 15 minutes or more, if desired, though it's not really necessary.
Place a scoop over a bed of fresh salad greens, between bread for a sandwich, or in a pita pocket. Use plenty of lettuce or greens if you're using this for a sandwich!

*Use your imagination, and experiment with this one a little bit. I've used raisins, craisins, leftover chicken, water chestnuts, and lots of other slight variations that I can't remember...all with great results. You can also alter the amount of dressing by altering the amount of chicken, etc.

** Side note: Use pre-cooked chicken to eliminate cooking time altogether!
