Pulled Chicken Ingredients:
2 Boneless/Skinless Chicken Breasts (approx 20oz)
3 Tbsp Barbaque Sauce
1 Tbsp Paprika
1 Tbsp Onion powder
3 Chipotle Pepper in Adobo Sauce
1 can Chicken Broth (10.75 oz)
Salt, 1 dash
Broccoli Slaw Ingredients:
3 cups roccoli slaw (broccoli, carrots, red cabbage) shredded
4 oz Organic Greek Yogurt
3 tsp Dressing - Hidden Valley Dry Ranch Dressing Mix
1 Tbsp Kraft Mayo with Olive Oil (reduced fat mayonnaise
Mango Salsa Ingredients:
1 Fresh Mango Diced
1 Jalapeno Peppers diced
1/4 cup Red Onion Raw diced
2 Tbsp Cilantro, raw
1/2 Lime Juice
Tips
For a lower carb option serve on a bead of lettuce instead of bread.
Directions
Combine all of pulled chicken ingredients in a pot and cook on medium for 40 minutes. Use 2 forks to shred chicken and set it aside. Combine broccoli slaw ingredients listed and mix well. Combine Mango salsa ingredients in a bowl and mix well set aside. On you favorite roll or bread put 1/6 of pulled chicken, 1/6 broccoli slaw, and 1/6 mango salsa. Keep in mind the amount of the bread will be additional calories to the recipe.
