Ingredients

2 fish fillets, (250g raw) fresh or frozen & thawed
4 drained canned plum tomatoes
4 medium mushrooms, sliced
1 clove garlic, minced
1 tbsp chopped fresh basil or 1 tsp (5 mL) dried
1 tsp chopped fresh oregano or 1/4 tsp (1 mL) dried
Pinch freshly ground pepper
Directions
Cut 2 sheets of parchment paper or foil, spray with non stick cooking oil. Place fish fillets in centre of paper. Spray with non stick cooking oil.
In small bowl cut drained tomatoes into small pieces, add mushrooms, garlic, basil, oregano and pepper, spoon evenly over fish. Fold foil to seal. Bake 400 f oven for 20 minutes or until flakes.
