Ingredients

    2 large Egg, fresh, whole, raw
    1/2 tsp Cinnamon, ground
    1/2 tsp Salt
    1 tsp Baking Soda
    1/2 cup, packed Brown Sugar
    12 cup Granulated Sugar
    1/2 cup Country Crock, Shedd's Spread Country Crock
    1/2 tsp McCormick Pure Vanilla Extract
    1 cup chopped walnuts
    1 cup King Arthur White Whole Wheat Flour
    1/2 cup Flour - Gold medal all purpose flour
    2 Tbsp. Bob's Red Mill Vital Wheat Gluten Flour
    3 medium Bananas, fresh mashed

Tips

*You can mix 1/2 cup of brown sugar, 1/2 tsp cinnamon, and 1/2 cup finely chopped nuts in a small bowl and sprinkle the batter with the mixture before baking to give the bread a sweet, nutty, crunchy topping.

Directions

Cream the sugars and butter in a large bowl. Add the eggs and bananas and beat well. In a separate bowl combine the flour, baking soda, cinnamon and salt. Add this mix to the wet mix and beat well. Add the vanilla and beat again. Mix in the nuts with a spoon (or just sprinkle on top of the bread before baking ) and pour into greased and floured bread pan. Bake at 350 degree oven for 60 minutes or until a butter knife inserted in center comes out clean. Cool for 10 minutes and loosen sides of bread. Pop the bread out of the pan carefully and continue cooling completely before serving.
