Ingredients

1 can red or white kidney beans (15 oz)
8 morningstar vegetarian sausage patties, chopped
4 oz of canned sweet corn
2 scallions, chopped
1/3 cup dry bread crumbs
1 egg, slightly beaten
1/2 cup fresh chopped cilantro
1/2 tsp ground cumin
2 tsp vegetable oil
Directions
Pulse beans in food processor until coarsely chopped (or do what I do and use a pastry blender to mash them up).
In a large mixing bowl, add beans, vegetarian sausage (warmed in the microwave for 1 minute to soften before chopping), cilantro, scallions, breadcrumbs, egg and cumin. Mix with a fork. (***It will look to dry, but don't worry, it will come together!)
Wash hands (and remove jewelry). Mash ingredients together and then scoop approximately a "tennis ball" size amount into your hand. Shape it into a patty and place on a large plate or platter. This makes 6 (more or less, depending on your desired size). Cover with plastic wrap and put in the fridge to chill (I let mine chill for a few hours).
Heave oil in a frying pan on medium heat. Cook patties for 4-5 minutes on each side, until golden brown. I put them on a paper towel to remove any excess oil.
Serve with bun of choice, and I recommend serving with thinly sliced avocado and a sauce made from 1/3 plain greek yogurt, 2 tbs chopped cilantro, 1/2 tsp lime juice and 1/4 tsp salt. Enjoy!!
