Ingredients

100 ml egg whites (I used cartoned egg whites)
2 tbsp Stevia in the Raw (or your favourite sweetener)
pinch salt
1/2 tsp maple extract - optional
1 tbsp chickpea flour
1 tsp cinnamon
2 cups (about 300g) grated zucchini, squeezed dry
Directions
In a bowl, mix together the egg whites, stevia, salt and maple extract until well combined.
Whisk together the chickpea flour and cinnamon and add to the egg whites, whisking until no lumps remain.
Add the zucchini and mix well.
Spoon patties made of about 2 tbsp of the mixture into a skillet sprayed with non-stick spray.
Cook over medium heat about 3 minutes per side.
Serve hot with your choice of topping!
