Ingredients

    LOW CARB CROCK POT THAI PEANUT CHICKEN



    INGREDIENTS
    4 boneless, skinless chicken breasts
    1 Jar medium salsa
    ½ cup creamy or chunky peanut butter- no sugar added
    1 lime, juiced
    ½ cup low sodium chicken broth
    ¼ cup low sodium soy sauce
    Chopped green onions
    Dry roasted peanuts for topping
    Fresh Cilantro if you like it


Tips

You may not need the chicken broth at all. Chunky salsa seems to supply enough moisture, while smoother types do not. Salsa varies wildly in carb counts. Read the labels.


Directions

Put the chicken in the crockpot. Top with the salsa. In a bowl, mix together peanut butter, lime juice, chicken broth and soy sauce. Pour over salsa and chicken. Cook on low 3-4 hours. Serve over chopped cabbage, lettuce or other low carb vegetables. Top with peanuts, chopped green onions and cilantro (if you like).
