Ingredients

2 C. almond flour - finely ground
1 t. baking soda
1 t. Lite Salt
4 eggs - separated
1 C. unsweetened applesauce
1/3 C. coconut oil - melted
24 servings liquid stevia or monk fruit extract
1 t. almond extract (optional)
1 C. pitted sour cherries
Tips
You can substitute any kind of berries for cherries, or skip the fruit and add cinnamon. You can make a crumb topping with almond flour, butter, sweetener and cinnamon.
Directions
Preheat oven to 375 degrees. Mix first 3 ingredients, set aside. Mix egg yolks, apple sauce, coconut oil, stevia or monk fruit extract, and almond extract. Beat egg whites until soft peaks.
Prepare muffin pan with papers and non-stick spray on top of papers. Now mix dry ingredients with wet ingredients until just barely mixed. Fold in beaten egg whites gently until barely mixed. Use 1/4 c to spoon into prepared muffin pan. Bake until toothpick come out clean plus 2 minutes.
