Ingredients

Granulated sugar, 1 cup
Butter, salted, 1 stick
Egg, fresh, whole, raw, 2 large
Banana, fresh, 1 medium (7" to 7-7/8" long)
Milk, 2%, with added nonfat milk solids, without added vit A, .5 fl oz
Cinnamon, ground, 1 tsp
*Bread Flour - Unbleached, King Arthur Flour, 2 cup
Baking powder, 1 tsp
Baking soda, 1 tsp
salt, 1 tsp

Directions
Preheat oven to 325 degrees F. Butter a 9 x 5 inch loaf pan. Cream sugar and butter in a large mixing bowl until light and fluffy. Add eggs one at a time, beating well after each addition. In a small bowl, mash bananas with a fork. Mix in milf and cinnamon. In another bowl mix together flour, baking powder, baking soda and salt. Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients mixing just until flour disappears. Do not over mix. Pour batter into prepared pan and bake 1 hour and 10 minutes. Cool on a rack for 15 minutes. Remove from pan and continue to cool on a rack . Allow to cool completely before slicing.
