Ingredients

    3/4 cup stevia
    2 cups spelt flour (or oat flour)
    1 cup oats
    1 can raw pumpkin (15 oz)
    3/4 cup egg whites
    1/2 cup almond milk
    1 cup unsweetened applesauce
    1 cup diced pineapple (throw the juice in there, too!)
    2 scoops vanilla protein powder
    2 tsp baking powder
    1 tsp baking soda
    1/4 tsp salt
    2 tsp cinnamon
    1 tsp pumpkin pie spice
    1/2 tsp ground ginger
    2 tsp vanilla extract
    1/2 cup raisins (optional!)

Directions

Mix applesauce and stevia together until well blended. Then add egg whites, vanilla extract, almond milk, pumpkin and pineapples. Beat well and set aside.
Mix dry ingredients together and slowly add to pumpkin mixture.
Pour into (2) non-stick spray coated loaf pans. Bake at 350 for 55 - 65 minutes.



Serving Size: makes 24 slices. 1 serving equals 1 slice :)
