Introduction

These are a very light tasting lightly lemon orange cookie.Everyone in my family loves them. These are a very light tasting lightly lemon orange cookie.Everyone in my family loves them.

Ingredients


    Cookies

    2 cups shortening
    1 1/3 cup sugar
    2 eggs
    2 cups cooked mashed carrots
    1tsp. salt
    4 cups flour
    4 tsp. baking powder
    2 tsp. vanilla
    1 tbsp. lemon extract

    Icing

    2 cups powdered sugar
    1/2 stick butter
    scant teaspoon orange rind
    Orange juice

Tips

I make the icing so that it is stiff enough to ice the cookie not just glaze it. Then I let the icing set before serving.


Directions

Cookies: Cream shortening and sugar, add beaten eggs and cream. Add carrots and blend well. At this point I add flavorings. Add sifted dry ingredients. Drop onto greased cookie tins. ( I use the silicone mats no grease) Bake in 350 degree oven until lightly browned just edges. 17 minutes. Frost with orange butter icing.

Serving Size: Makes at least 6 dozen cookies dropped by teaspoon
