Ingredients

0.50 cup Buttermilk, lowfat
1 tsp Salt
1 tsp Vanilla Extract
1 cup, mashed Banana, fresh
1 tsp Baking Soda
1 cup Granulated Sugar
1.50 cup Flour, white
2 serving Grade A Extra Large White Eggs
1 cup Steel Cut Oats, dry
.33 cup, chopped Walnuts
1 stick Butter, unsalted
Tips
Did not have buttermilk for the recipe so i mixed 1/2 cup whole milk with 1/2 tbsp Vinegar as a substitute
Directions
Heat oven to 350
Grease bottoms of muffin tins
Mix sugar and softened butter together then add eggs, bananas, buttermilk and Vanilla. mix with electric mixer or by hand until smooth. Stir in Flour, Baking Soda and Salt until just moistened. pour batter into muffin cups. top each with chopped nuts.
Bake 20 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides and remove from pan to wire rack
Serving Size: makes 24 muffins
