Ingredients

    5 cups rhubarb, 1/2" slices (1 pound)
    31/2 Tbs sugar (I used coconut palm sugar)
    2 Tbs orange juice
    2 mandarin oranges, sectioned and cut in half (or 1 regular orange)
    1/4 cup chopped walnuts
    1 tsp grated orange peel

Directions

Cook rhubarb with 1 Tbs water in a large skillet over low heat, until tender, 5 to 8 minutes. Stir in remaining ingredients. Serve warm or chilled.
