Introduction
A version of the chinese dish which fussy children may prefer to the real thing as the flavours are natural and gentle. Serves two adults and one child. Ingredients

Two large skinless and boneless chicken breasts
1 small fresh pineapple chopped or tinned chunks
2tblsp tomato paste
2tblsp soy sauce
1tblsp balsamic vinegar
1tsp brown sugar
6oz basmati rice
3oz frozen peas
water
1tbsp oil
Directions
Serves 3-4.
Cut the chicken into chunks and fry in the oil until white all over. Put the rice and peas into a large saucepan and follow the instructions on the rice packet to cook them.
Add all the other ingredients to the chicken with enough water to come half way up the frying pan, bring to a simmer and cook gently for around 15-20 mins.
My family enjoy this meal with peanuts sprinked over the rice.
