Introduction

Named for a dear friend who loved this salad so much he asked for it for breakfast! This is like the Greek Salad you find in delis, but without the olives. You can add them or anything else you like, such as chunks of hard salami or artichoke hearts. It's very versatile. Named for a dear friend who loved this salad so much he asked for it for breakfast! Ingredients

    2 cups grape or cherry tomatoes, or other types cut in chunks

    4 cups cucumber cut in chunks

    1/2 cup green or sweet onions, chopped

    8 oz. fresh Mozzarella cheese, cubed

    1/2 cup wine vinegar

    1/4 cup olive oil

    1/2 tsp minced garlic, or to taste

    basil, oregano, s & p to taste

Directions

Combine first four ingredients in large bowl. Whisk together vinegar, oil and seasonings. Pour over salad ingredients, toss and chill. Looks very pretty in lettuce leaf lined bowl.
