Ingredients

1 cup Almond Meal
1/2 tsp. Baking Powder
1/2 cup Erythritol/Stevia blend
1/3 cup Unsweetened Shredded Coconut
3 Tbsp Coconut Flour
1/4 cup Cocoa Powder
1/4 tsp. Salt
2 large Eggs, room temperature
1/4 cup Coconut Oil
1 tsp. Vanilla Extract
Tips
These are not very sweet. I rolled them in a coconut/powdered erythritol mix to add a little sweetness.
Directions
Mix together your almond flour, baking powder, Stevia, salt and unsweetened shredded coconut in a bowl. Add coconut flour and cocoa powder to your bowl and continue to mix until all dry ingredients are nicely distributed. Add wet ingredients and mix together again. Once the dough starts to harden, use your hands to knead it into a ball. Roll the dough into small balls and place on a parchment lined baking sheet. Place in the oven and bake at 350º for 15-20 minutes.
