Introduction

Ingredients

1/4 C diced onions
2 C homemade chicken broth
salt and pepper to taste
1 tsp soy sauce
1/8 tsp ground ginger
2 eggs, slightly beaten
optional (not counted in nutritional value) chopped green onions for garnish.
Tips
This is very good and very filling.
This is also a great option on the days when you don't feel your best. A replacement for chicken noodle soup.
Directions
1. In a nonstick pot, put in the diced onion and cook until translucent (if you need, add some oil).
2. Add the broth, soy sauce, and ginger. Add salt and pepper to taste. Bring to a boil.
3. Stir the broth in a clockwise motion, and while it is still twirling, add the beaten eggs. Continue to stir.
4. Pour into bowls. If you like top with chopped green onions.
