Introduction

There's a nice spicy/sweet/tangy blend in this nutrient-dense wrap. As written, each serving of this is crazy rich in A, B-6, C, potassium, iron, fiber and more, and packs a respectable 15g protein -- all at under 400 calories. Ingredients

    2 cups cauliflower, in small florets
    1 can chick peas, drained and rinsed
    1.5 T curry powder
    1/4 C vegan mayo
    1/4 C raisins
    1/4 C almonds, chopped, crushed or sliced
    Juice of one lemon (fresh)
    Pinch of sea salt,to taste (optional)
    Around 12 butter lettuce leaves, or other lettuce for wrapping

Tips

* Even if you're raisin-averse (like me), please don't omit them until you've tried it this way first - the sweet counterbalance they add really makes the whole thing pop.

* I like the texture of this with 1/4 C vegan mayo, but you can shave off 3g fat per serving by reducing to 3 T mayo instead.

* This is reasonably low in sodium. But you can take each serving all the way down to 170mg by swapping out regular canned chickpeas for a no-salt brand like Eden, or using home cokked chick peas instead.


Directions

Heat oven to 450. Line a baking sheet with parchment paper.
Add cauliflower, chick peas and curry powder to bowl and toss to combine thoroughly. Spread on baking sheet, spraying lightly with cooking spray. Roast for 25-30 minutes, stirring at least once midway. Put roasted curry mixture back in mixing bowl and allow to cool a bit. Add mayo, lemon juice, raisins and almonds and stir to combine. Place dollops of mixture into lettuce leaves, wrap and enjoy.
