Introduction

My husband found this recipe in a newspaper, and I tweaked it to suit our taste. If using canned pineapple, make sure the pineapple is canned in juice, even though you drain it first.
This salsa is great with fish, on a tossed veggie salad, or even to top scrambled eggs! Great whenever you want a taste of summer!

Number of Servings: 16

Ingredients

    2 cups finely chopped, seeded watermelon (do not puree)
    1 c crushed pineapple, drained well
    1 c sweet onion, minced
    1/4 c chopped fresh cilantro
    1 Hungarian Hot Pepper, minced
    1/4 c orange juice

Tips

I used a food chopper to mince the onions and the peppers together.


Directions

Combine all ingredients, stirring well to incorporate. Cover and refrigerate for at least 30 minutes before serving. This is a great salsa for grilled fish or added to a tossed veggie salad.

Serving Size: Makes 4 cups, or 16 1/4-cup servings
