Introduction

Ingredients

    1/4 jar of drained Tesco's Roasted Red Pepper (in a jar)
    2 mushrooms sliced
    1/2 a small onion thinly sliced
    150g of cooked cold rice in a wide dish
    25g of brie (you could substitute feta cheese)
    1/2 teaspoon of paprika
    seasoning

Directions

Heat a non stick frying pan.
Put in the peppers (the bit of oil coating the peppers is enough to finely coat the other ingredients)
Add the onions and mushrooms.
Stir and cook until onions are mushrooms are cooked.
Sprinkle the paprika over the vegetables. Cook for 1 minute more.
Pour vegetables over rice.
Break up brie into bits over the warm vegetables.
Season to taste.
Enjoy
