Introduction

This is a great way to get some morning protein, and some early vegetables. It is easy to make and tastes awesome. Obviously you can add or delete almost any ingredient. Ingredients

    1 egg
    1 egg white
    1/4 C. mushrooms, sliced
    1/4 C. chopped fresh spinach
    1/2 chopped scallion, or to taste
    2 tbsp. parmesan cheese

Tips

You do not have to make an omelet. You can just make scrambled eggs. Start with the vegetables, then add the eggs, then the cheese and use a spatula to keep the eggs from burning, as they cook.


Directions

Take out a small skillet. Coat it with Pam butter spray, or I can't believe it's not Butter spray. Add scallion and spinich. Cook until onion is somewhat clear. (About 5 minutes.) Add mushrooms, and cook until they are reduced in size, maybe two or three minutes. Pour beaten eggs over ingredients, sprinkle cheese over the eggs. Put a cover on the pan, have the heat on the stove at low, and let the eggs cook. Probably less than five minutes. Take the omelet out of the pan and fold over, for a beautiful breakfast.
