Ingredients

    2 medium Sweet potato, scrubbed, unpeeled, cut into 1/2 in. strips
    1 tbsp olive oil
    1/4 tsp each: onion powder, garlic powder, chili powder, paprika, and cumin
    Generous sprinkling of fresh ground black pepper
    1/2 tsp Sugar

Tips

For crispier fries, soak the potatoes in water at least 30 minutes and pat dry thoroughly before tossing with oil and spices.

Experiment with different spice combinations -- sweet potatoes are seriously versatile.


Directions

Preheat oven to 450, and cover a baking sheet with parchment paper.
Mix potatoes, oil and spices thoroughly in a medium bowl until spices and oil are evenly dispersed. Spread potatoes in a single layer. Bake 20 to 30 minutes, turning fries every 10 minutes. Adjust time to reach desired crispiness without burning. Serve with ketchup or your favorite dipping sauce.
