Ingredients

    CHICKEN
    1 Lb. Boneless Skinless Chicken Breast
    1/2 cup Water
    1/2 cup White Corn & Black Bean Salsa (Optional)
    2 serving Taco Seasoning (Low Sodium Substitute)
    *Found in SparkRecipes - You can use packaged, but note the nutrition facts will change

    QUESADILLA SAUCE
    1/2 cup Helman's Light Mayo
    4 tsp minced Great Value Jalapeno Peppers (jarred)
    4 tsp Jalapeno Pepper Juice (from the jar)
    1 tsp Splenda No Calorie Sweetener
    1 tsp Paprika
    1 tsp Ground Cumin
    1/4 tsp Garlic powder
    1/4 tsp Onion powder
    1/4 tsp Pepper, red or cayenne
    *Substitute Taco Seasoning for the spices if desired

Tips

Add Monterey jack cheese and make a quesadilla with a whole wheat tortilla in a quesadilla press

Use whole wheat bread and make a toasted quesadilla sandwich

Serve over a bed of romaine for a quesadilla salad

Serve over a bed of brown rice.

Directions

QUESADILLA SAUCE:
1. Combine all ingredients in a sealable container and refrigerate for at least a half hour so flavors meld.

CHICKEN:
2. Place chicken in a slow cooker.
3. Sprinkle Taco Seasoning on top of chicken.
4. Slowly add water.
5. Top with Salsa.
6. Cook on Low 6-8 hours, or high 4-6 hours. Chicken is done when it shreds easily.
7. When chicken is cooked, carefully drain excess water, taking care to reserve as much salsa as possible.
8. Shred chicken using 2 forks (chicken should still be in crock pot. If not, it's ok, just do it in a large bowl or container).
9. Mix Quesadilla Sauce into Shredded Chicken.
Voila!
