Ingredients

4 oz Cream Cheese
16 fl oz Heavy Whipping Cream
16 oz Cabot Seriously Sharp Cheddar Cheese
2 serving Annie's Naturals Organic Dijon Mustard, 1 tsp
1 tsp Redmond Real Salt Ancient All Natural Sea Salt (by HWNHMMBRD)
.25 tsp Pepper, black
8 cup Steam Fresh Garlic Califlower

Directions
Steam one large head of califlower. Heat cream to scalding, then add cream cheese and keep stirring on low heat. Once completely melted into the cream, add grated sharp cheddar, saving 1 cup for top of casserole. Continue to stir til smooth. Add salt and pepper and dijon mustard.
Drain well the califlower once it is crisp tender, al dente. Cut or break up the califlower into an 8"x 8" glass pan, which has been coated with olive oil or other Ketogenic Paleo friendly healthy fat, such as avocado oil.
Pour the cheese sauce of the califlower. Top with grated cheddar and bake at 350 approx 45 min, until top is brown and has nice crunchy top.
Let cool for at least 20 min. Serve with protein of choice.
