Introduction
It was the first day of a new diet. And I was fed up with my baby carrots. I wanted bacon and I wanted it bad. So I took my favorite stuffed jalapeno recipe, nixed the bulk of the calories and added its WHAM POW Slap your momma flavor to a good ol lean pork chop. Ingredients

1 serving pork chop boneless thick cut 4oz.
1 serving bacon, hormel black label bacon lower sodium 2 pcs
1 1tsp Coconut Oil
2 pepper Jalapeno Peppers
2 oz Onion, sweet, raw
0.5 tsp Emeril's Essence Creole Seasoning (by RACHELM1981)
Directions
Cut 1-2 strips bacon into thin slices
Seed/Core and slice 2 jalapenos into thin strips
Slice ~1/4 cup sweet onion very thinly
In a large non-stick skillet. On Medium-Medium High heat warm sliced bacon until it starts to sweat and liquid fat begins to come from the meat. Add thinly sliced jalapenos and onions. Cook until 'al-dente' (tender but with a slight crisp to it). Move bacon/onion/jalapenos to the sides of the pot to continue cooking.
Add 1tsp coconut oil to middle of hot pan (unless you have enough bacon fat to keep the pork from sticking ... my onions absorbed all my fat). Season pork chop on both sides with Cajun seasoning. Place porkchop in oil and brown, flipping until cooked to desired temp. (I cooked mine about 1-2 min per side until I knew mine was done to about medium which suits me fine).
Serving Size: Makes 1 fully loaded pork chop
