Introduction

This is my favorite lunch salad, but could easily be used a side. I use the slaw, vegenaise & salsa verde as the base and let it blossom from there - I have added avocado & green onions before too. Ingredients

    1.5 cup cole slaw mix cabbage & carrots (by RAYLINSTEPHENS)
    1 serving vegennaise (by MCWJEANNE) - 1 tbsp
    1 serving Herdez salsa verde (green salsa) - 2 Tbsp (by LIZBETH08)
    1 tbsp Hormel Bacon Bits
    3 ounces Chicken Breast (cooked), no skin, roasted

Tips

Again, add as much or as little as you want to this salad - I have added avocado, sunflower seeds, green onions, etc.


Directions

Cook your chicken however you want - I have used leftover chopped grilled chicken as well as crock pot shredded chicken (with your favorite marinade, of course). Mix all ingredients except bacon bits. I like to add those right before eating/serving. Enjoy!!!

Serving Size: makes 1 serving if eaten as a meal
