Introduction

I substituted a few things to try and make this a little bit healthier. Like greek yogurt for heavy whipping cream and I prefer it with Flounder instead of trout. But you can put the other things back in if you want. It's will just be different calorie wise. I substituted a few things to try and make this a little bit healthier. Ingredients

    8 oz. Mushrooms
    6 tbsp Earth Balance Natural Buttery Spread, divided into 2 tbsp each
    2 tbsp Parsley, fresh
    1/4 tsp Salt
    16 oz.Flounder Fillets
    1/2 tsp. Lemon Juice
    5.5 tbsp Heavy Whipping Cream
    4 tbsp Coconut Flour

Directions

1. In a large skillet, saute mushrooms in 2 tablespoons of butter until tender. Stir in parsley, remove. 2. Combine flour & salt in a shallow dish; coat fillets with flour on both sides. 3. Add 2 tablespoons of butter to skillet, cook flounder over medium heat for 8-10 minutes on each side or until fish flakes easily with fork; arrange over mushrooms. 4. Melt 2 Tbsp butter in a small saucepan. Gradually stir in cream & lemon juice. Bring to a boil for 3-4 minutes or until slightly thickened, stirring constantly. 5. Serve sauce over flounder & Mushrooms. Serving Size: 4
