Directions
Wash, trim, and cut potatoes into a 1 inch dice.
Boil 20 minutes on medium high. Drain.
While potatoes are boiling, brown turkey in the microwave three minutes at a time. Drain excess liquid, chop, and repeat two times.
Chop onion. Saute onion in the light butter in a large skillet. Add seasonings to taste.
Add ground turkey, green chiles and 1/4 cup water and mix together.
Drain potatoes and cut down to about 1/2 inch cubes. /some of the potatoes will break up a bit and fall apart - this is the desired effect and will give your hash a nice texture and body.
Add potatoes, green beans and remaining water to the pan. Adjust seasoning and heat over medium, heat 5 minutes, covered Add more water if the mixture is too dry.
