Introduction

I had a cookbook recipe for homemade salsa using fresh tomatoes but I didn't want to bother with fresh as canned, no salt added tomatoes are more readily available. Ingredients

    1 can (796 mL) PC Blue Menu Diced Tomatoes, drained
    1/2 Hot Chili Pepper (or more if you like spicy)
    4 tbsp Unico Wine Vinegar
    1 medium Onion, raw, chopped
    1 tsp minced Garlic
    1.5 tsp Cilantro, dried
    1/2 tsp Oregano, ground
    1.5 tsp Cumin, ground

Tips

Makes approximately 3 cups.


Directions

1. Combine all ingredients in a pot and simmer to desired thickness (about 15 to 20 minutes).
2. Pack into jars and store in fridge.
3. Use within a week or freeze for up to 3 months.

Serving Size: Makes 6 half-cup servings.
