Ingredients

    2 large Egg, fresh, whole, raw
    2 cup, mashed Banana, fresh
    1 tsp Vanilla Extract
    1 cup Rosarita Black Bean Refried Beans
    1 tsp Salt, Sifto Table Salt (by FAREWELLBC)
    0.75 cup Einkorn Flour (by JANIS-IRENE)
    0.25 cup Cocoa, dry powder, unsweetened
    2 tsp Baking Powder
    1 tsp Cinnamon, ground
    0.25 cup Nonfat Plain Greek Yogurt (Kirkland)

Tips

Einkorn flour reduces the gluten and cocoa powder increases the antioxidants. Black beans add fiber and increase protein.


Directions

Preheat oven to 350. Grease loaf pan. Beat the eggs until fluffy. Mix in mashed banana and black beans. Add milk and vanilla and stir until uniform. In another bowl, mix the dry ingredients until uniform. Add the dry ingredients to the wet and mix until just moistened. Pour into prepared loaf pan and bake for 45 minutes or until a toothpick inserted in the center comes out clean.
