1 Mission , 6.5" Low Carb Fajita Size Tortilla,
1/4 cup Beans, black
1/4 cup Yellow Sweet Corn, Canned
2 jumbo Black Olives
1/4 cup Shredded Cheddar Cheese
1 oz. Chicken Breast, no skin
1/4 cup of dices tomatoes (fresh)
1 Tsp. of taco seasoning
Directions
dice chicken into small pieces, season with taco seasoning and brown ,and set aside.
then in same pan brown corn, then add black beans and olives. saute a few seconds till hot. in another pan toast tortilla and then add all the ingredients on top and then spinkle with the cheese and tomatoes fold over. toast on both side till cheese melts. serve hot.

Loved it! I substituted deli salsa for the tomatoes and didn't have any corn or olives on hand, and it was still really yummy. Instead of taco seasoning, I used some kosher salt, extra hot chili powder, fresh ground pepper and red pepper flakes. - 2/3/11

The whole family liked this one. I didn't use the whole packet of seasoning even for three servings (just enough to season meat). I used canned diced tomatoes instead and mixed them in with the chicken for more moisture. Easy and yummy. - 4/23/09
