Ingredients

    8 oz whole wheat spaghetti
    2 medium cloves of garlic
    1 tbsp ginger root
    1 lb lean pork tenderloin, cut into chunks
    ½ cup shredded carrot
    ½ cup diced onion
    1 cup fat-free chicken broth
    2 tbsp soy sauce
    scallions for garnish

Directions

1) Cook noodles according to package.

2) Coat pan with cooking spray and cook garlic and ginger for 1 minute.

3) Add pork and cook for about 5 minutes, until pork is golden brown.

4) Add carrots and onion cook 2 minutes.

5) Add broth and soy sauce. Cook 5 more minutes.

6) Add noodles and cook to warm.

7) Garnish with scallions.

    Incredible!
    Very simple, tasty recipe. I fixed it for my lunch using left over noodles, left over pork (didn't have to cook as long) and adding celery with the carrots. Loved it. - 9/30/09

    This tasted nothing like pork lo mein and was hardly satisfying. I had to eat almost two portions to feel like I had a meal, but still wasn't full. My husband who eats anything wasn't fond of it either. - 10/9/08

    Incredible!
    I really enjoyed this tonight! I added a shredded zucchini to the carrots and onion,I used a little bit of olive oil to saute the veggies and I had to use rice vermicelli instead of the wheat spaghetti due to allergies but it all worked out great. Thanks for sharing this! - 8/12/08
