Ingredients

    1 1/4 cups uncooked long grain brown rice
    1 tsp Extra Virgin Olive Oil
    6 Marc Angelo Extra Lean Turkey Sausage (80 calories/sausage)
    1 1/2 cup onion chopped
    1 medium red bell pepper
    2 stalk, large celery, sliced
    1 tsp Cajun Seasoning
    2 cup Campbell's low sodium chicken broth
    1 28-ounce can Unico Diced Tomatoes (20 calories/ 1/2 cup)
    2 serving President's Choice Pacific White Shrimp (30 shrimp)
    1/2 cup kernels Yellow Sweet Corn, Frozen

Directions

Heat 1/2 tsp oil in a large Dutch oven over medium heat. Add sausage and cook until done. Remove from pan, cool slightly and slice. Add remaining oil. Add onion, celery, and bell pepper; sauté 5 minutes or until vegetables are tender, stirring frequently. Add rice; sauté 2 minutes, stirring constantly. Add Cajun seasonoing; sauté 1 minute. Add broth and tomatoes; bring to a boil over medium-high heat. Cover, reduce heat to medium-low, and simmer 25-30 minutes. Add shrimp and corn; cover and cook 5 minutes or until shrimp are done.

Serving Size: 1 1/2 cups
