Ingredients

    1 Tblsp. Olive Oil
    5 cloves fresh garlic, minced
    3 - 6.5 ounce Chopped Clams in Clam Juice
    1/2 c. white wine, any kind
    4 Tblsp. Parsley, dried or fresh
    1 can diced tomatoes in sauce (optional)
    salt & pepper to taste
    1 lb. whole wheat linguini or spaghetti

Directions

In skillet, lightly sautee fresh garlic in olive oil over medium high heat. Once garlic is very lightly golden in color, add clams & juice to skillet. Stir & simmer for a few minutes. Add white wine, bring to a low boil or until alcohol evaporates. This may take about 10 minutes. Add canned, diced tomatoes, (optional-if making a red sauce, no tomaotes will make white sauce), salt & pepper. Pour clam sauce over cooked & drained whole wheat spaghetti. Serve immediately. Serves 6.
