Ingredients

    1 serving Gardein Ultimate Beefless Strips, 10 oz bag
    1 tbsp Olive Oil
    .5 medium (2-1/2" dia) Onions, raw
    1 stalk, large (11"-12" long) Celery, raw
    1 cup, pieces or slices Mushrooms, fresh
    1 cup, chopped Carrots, raw
    3 medium (2-1/4" to 3-1/4" dia.) Potato, raw
    0.5 cup Peas, frozen
    2 Bay leaves dried
    1 tsp Thyme, fresh
    1 dash Pepper, black
    3 cup Vegetable Broth
    .125 cup Corn Starch


Tips

I add a tsp of dried porcini powder along with the fresh mushrooms to add more depth of flavor. This is not necessary but it is REALLY delicious!


Directions

Saute "beef" strips in olive oil until browned and then set aside. Add diced onion, celery, and mushrooms to the pot and cook until translucent. Add diced carrots and diced potatoes and then pour in the broth. Add bay leaves, thyme, and pepper and simmer until vegetables are cooked (about 20 minutes). In the meantime, dice the strips into bite-sized chunks and add to the pot along with the peas. Stir a little cold water into cornstarch in a small bowl to make a slurry and then drizzle into hot broth until it is thickened. Cook for another minute and then serve.

Serving Size: Makes 4 generous servings or 6 small ones.
