Ingredients

12 oz Ground turkey, 93% lean
1 tsp Olive Oil
Approximately 3 cups of loosely-chopped red, green, and yellow bell peppers
1 cup chopped onion
1 cup Brown Rice
1 22-oz can Hunt's Pasta Sauce (Garlic and Herb)
About 10oz water
0.5 tsp Cayenne Pepper
Tips
You could make this without the turkey and serve with salsa-marinated chicken breast. Very versatile recipe.
Directions
Brown turkey (I remove from pan and drain/rinse to reduce fat)
Sautee peppers and onions in the olive oil (can add garlic, if you wish) until tender-crisp, then combine in a pot with the ground turkey. Add brown rice, tomato sauce, water (says 10oz--I do about 1/2 the tomato sauce can), and cayenne. Stir well, cover, and simmer until the rice is done.
You can add all the herbs you like. Since I use Hunt's sauce, and it tends to be on the salty side, I usually do not add salt.
The portions are generous. It freezes well.
Serving Size: Makes 4 servings
