Ingredients

    2 lb. Beef chuck roast
    1/4 c. soy Sauce
    1 Tbsp. minged garlic
    1/2 tsp. ground ginger
    1/4 c. brown sugar
    1/4 c. water
    2 Tbsp. corn starch

    (Optional Green Onion Garnish)
    4 green onions
    1Tbsp. soy sauce
    1 Tbsp. olive oil

Tips

This recipe has half the original recommended amount of sugar because of our family's taste preference and dietary needs.

Serve with steamed rice or noodles (calculate nutrition information for rice/noodles separately.)


Directions

In slow cooker, combine chuck roast, 1/4 c. soy sauce, garlic, ginger, brown sugar, and 1/4 c. water. Cook on low for 8-10 hours.

Remove meat from liquid, remove excess fat, and shred meat.

In a small sauce pan, whisk together 2 Tbsp. corn starch plus 1/4 c. water. Add about 1/2 c. of cooking liquid from slow cooker. Stir over medium heat until mixture bubbles and thickens. Return this thickened mixture to slow cooker with remaining cooking liquid, and stir well. Use this sauce over shredded meat.

Green Onions (Optional)
Heat olive oil in skillet. Cut green onions into 2" pieces. Add onions and 1 Tbsp. of soy sauce to hot oil. Stir for 2 minutes, then serve green onions with shredded meat and thickened sauce. Can serve over cooked rice or noodles (calculate nutrition info for rice/noodles separately).
