Ingredients

    2 6oz pieces of Cod
    1.5 tbsp Olive Oil
    1/2 cup panko bread crumb
    1 tsp lemon pepper seasoning

Directions

1. preheat oven to 425 degrees
2. Brush .25 tbsp of olive oil on the bottom of a shallow baking pan (enough to cut the bottom).
3. Place the cod in the pan and brush cod with .25 tbsp. Season with lemon pepper.
4. Place cod in oven and bake for 20-25 minutes or until cooked through.
5. When the fish has 5-8 minutes left to cook, heat remaining olive oil in a skillet over medium-low heat. Add panko bread crumbs and toast until golden brown, stirring frequently.
6. When fish is cooked through, remove from pan and plate. Top with toasted panko.

Serving Size: Makes 2 pieces of cod
