Introduction

Ingredients

    0.5 oz Cream Cheese
    0.25 cup dry Oatmeal (plain)
    1 large Egg, fresh, whole, raw
    .25 cup Almond Breeze Almond Coconut Milk Blend Unsweetened
    0.8 ounces Chicken Breast (cooked), no skin, roasted
    .25 cup Spinach, fresh
    0.125 cup, chopped Onions, raw
    0.3 oz Cheese, Mozarella, Low Moist/Part Skim (Lucerne)
    Italian seasoning and salt/pepper to your taste. Bland without seasoning.

Directions

Mix oatmeal & egg together well. I whirled it in a little blender a few seconds. Add seasonings to it if desired. (Recommended). Heat a small frying pan,spray with nonstick spray and pour mix into pan and spread to desired thickness with a spatula. My pan was about 6"-7".
Cook over medium heat until it looks a bit dry on top then flip over like you are making a pancake. While this is cooking prepare your toppings. The measurements here were what I prepared. Once pizza crust looks cooked and lightly browned,remove from heat to an oven proof cookie sheet or similar pan. Scrape any residual oatmeal crumbs from frying pan,add milk ( coconut almond was what I had available) and cream cheese cut into small pieces and let milk heat to melt the cheese,stirring with a whisk. You need to let this boil a little bit so it will evaporate some & thicken up like a sauce. Add seasoning if desired once thickened & cover top of pizza with spinach leaves,then add chopped chicken,chopped onion and mozzarella cheese on too. Broil for a few minutes to melt the cheese and lightly brown the pizza. Don't place too close to broiler or leaves will burn. Hope you enjoy it!
