Ingredients

    3/4 c. egg beaters
    1/4 c. parmesan cheese, grated
    1/4 c. chopped fresh parsley
    2 T. lemon jiuce
    1/4 t. salt
    1/8 t. hot pepper sauce
    3 garlic cloves, minced
    8 (6 ounce) skinless, boneless chicken breast halves
    1/4 c. all purpose flour
    1 T. olive oil

Directions

Combine first seven ingredients in a shallow bowl.

Place each chicken breast between 2 sheets of plastic wrap and pound to 1/4 inch thickness using a rolling pin. Dredge chicken in flour and dip in egg mixture.

Heat 1 1/2 t. oil in large nonstick skillet. Add 4 chicken breast halves and cook 4-5 minutes on each side or until done. Remove from pan and keep warm. Wipe drippings from pan with a paper towel. Repeat procedure with remaining olive oil and chicken breasts.

Makes 8 servings (serving size is one chicken breast).
