Introduction

Ingredients

    Roasted red peppers sliced julienne style (2)
    Goat Cheese creamy 2 oz
    Portabella mushroom sliced into 1/4" thick slices.
    1 small loaf of french bread or a roll split into 2 pcs.
    Olive oil.

Directions

Preheat you oven or toaster oven to Bake @ 350 degrees. Clean and slice your mushroom into 1/4" slices. Slice the roasted red pepper into thin slices. Cut the french bread* in 1/2 . brush the outside of the bread with the olive oil. Put them on a cookie sheet and spread 1 oz of goat cheese on the other side and each side of the bread. then layer the mushrooms in a straight line down the bread on top of the goat cheese. then place the roasted red peppers in between the mushroom spaces. ( hint it will look like a french bread pizza) Insert the pan in the oven and let it toast for about 10 minutes. Some ovens may vary so just keep an eye on them so they doont burn. When it is done it will look light brown on the edges of the bread. Take out of the oven and serve with a salad or some other side dish of your choice.

* You can substitiute french bread with any kind of a crusty bread of your choice. The nutritional value will change with different bread of course.

    Incredible!
    This was awesome. I grilled the mushrooms first and sprinkled the goat cheese with a little rosemary and black pepper and it was outta sight. - 6/25/08
